My family opened La Cocina Oaxaqueña in 2000 to share and educate people from around the world about the exquisite, renowned cuisine of Oaxaca, Mexico. My grandmother was from Etla town, a small Zapotec village where the culinary traditions stretch back thousands of years. My mother learned from her grandmother and my sister and I continue to learn from her and thus share a history of cooking that stretches back for generations. We’ve made our tortillas the same way for a long, long time!
I loved the food – eating and preparing – and thus chose to attend the National Superior School of Gastronomy and Tourism, graduating with a Degree in Culinary Arts and Management.
I thus learned the little secrets of Mexican cuisine from both family and school, and have continued to hone my skills in restaurants and catering businesses throughout Oaxaca and while travelling elsewhere in Mexico and Latin America.
Additionally, while studying local and rural tourism, I developed an interest in sustainability, organic food, and the Slow Food Movement, which is a focus to our work at La Cocina Oaxaquena. Oaxacan cuisine is traditionally “natural and organic” and it is important to all of us that we preserve and pass on these native practices. In addition to classes, I am currently writing a cookbook on Oaxacan cuisine.
We invite you to share our passion to recreate traditional Oaxacan cuisine with authentic Oaxacan flavors and aromas. Doing it with family and new friends from around the world is a dream come true for our family.

We LOVED this cooking class! It was wonderful to experience shopping in the market (one we would not likely have found on our own, btw) and then to then prepare the meal in a home environment. We learned new techniques we can use at home. We experienced new flavors. We ate family-style and received the recipes in written form. I would sign up for this class again if we ever find ourselves back in Oaxaca. It's a new menu each time, and the hosts are incredible cooks, knowledgeable about Oaxacan cuisine, and kind.

We enjoyed our class tremendously. It was a small intimate group which made it such a great experience. We all had a chance at doing different tasks and participating in the cooking. Our chef had a wonderful place, his family made us feel right at home. HIghly recommend it for anyone visiting Oaxaca!

I really enjoyed the market tour, and then being able to use the products we bought for our cooking class and lunch.
We have attended one or two cooking classes for each of the four years we've been coming to Oaxaca, and this one is one of the top two. Gerardo is an outstanding teacher -- he inspired all of us to participate and gave us guidance and encouragement. The dishes were varied and delicious, and we learned a great deal. He and his family provide a welcoming atmosphere and I know that, for everyone in our group, this was a positive and memorable experience.

One of the best cooking classes we have attended. Chef Gerardo took us through an enormous market that is off the tourist grid, and we learned a great deal about how to distinguish and choose chilies, unique fruits and unusual veg for Mex dishes. Cooking is in a beautiful Mexican kitchen, and all participants get a hand in cooking different parts of all the dishes. We learned several new techniques as well as dishes, and went home with all recipes (as well as suggested substitutions for ingredients we can’t get at home).
From touring the market to preparing and enjoying the meal, we loved it all! We would recommend the class to anyone interested in Oaxacan cuisine!

We had a wonderful time during our cooking class as part of a family vacation to Oaxaca. Gerardo and his family are true experts of the cuisine and culture and made sure to carefully explain each part of the shopping and class experience. Highly recommend this class for anyone visiting the region! The opportunity to visit a market and cook in the home of a local are truly unique and will create memories for a lifetime.
We visited the market and Gerardo took us round and taught us about various cooking implements as well as different ingredients. When we got back to his Mamas house we were treated to a coffee or chocolate to drink and then we got to some preparations. We learnt how to make Tamales and different moles as well as tortilla! At the end we were given beers or Mezcale and then ate our food. It was a great experience and we were picked up and dropped off at our hotel.
Very good and serious cooking class. First we went to a big market in town of Oaxaca and shopped the groceries. The cooking it self takes place in a private house of the family with very good facilities. I’ll definitely recommend this cooking class to any who have an interest in learning more about Oaxaca and Mexican food culture.
Nice tour in the market. And very good explanations by Gerardo. We had a lot of questions and he answer everything he knew very gently. When we did not know something specific about some ingredient he would humbly ask to the ladies in the market. Very nice experience overall. Very worthy!!
The cooking class was excellent! We loved spending time at our chefs house with his cool Mum. The food and techniques taught really exceeded our expectations!
Good amount of people (9), nice intro to the market. The chef was clear and instructive, taught us a nice variety of classic dishes.
The trip to the market was unlike anything I’ve ever seen before. We learned so much and then learned to prepare all and have a wonderful meal. He provided us with so much extra beverages, snacks (fried grasshoppers!) and dessert. What a great experience!
What a fabulous cultural and culinary adventure we experienced at La Cocina Oaxaquena. This is a great (and fun) way to learn about and taste local dishes that you prepare. It is a "hands-on" class and Chef Gerardo is a wonderful chef and instructor. Our group of six were picked up at our hotel by Chef Gerardo and then driven to a large open market where we chose our ingredients for the meal. Wandering through the market we learned about many of the local foods. After the visit to the market, we drove to Chef Gerardo's beautiful home with an amazing kitchen to prepare the food. Chef Gerardo gave options for the various dishes so you can easily prepare them at home. Then the best part - sitting down at the end of the class and enjoying a delicious meal. I HIGHLY RECOMMEND this class!
