I am a professional pastry chef and I am also a very good cook since I was very young: I am Neapolitan and cooking there is very important, it is the heart of my city. It is something you have inside and it comes natural either for the passion and the culture.
We will meet in the beautiful piazza of San Salvatore in Lauro, in the historical center of Rome, then we will head to my apartment which dates sixteenth century and I have a magnificent view of Castel Sant'Angelo, the palace of justice and the Tevere river. Here in my well equipped kitchen in my charming roman house, the cooking experience will take place. We will start by coloring the doughs with vegetables and super foods and we will make two different kinds of pasta: Farfalle with fresh sherry tomatoes and basil and Stuffed ravioli with butter and sage.
The class is hands on and will take approximately 3 hours. I have been studying the art of pasta since I was 6 and yet I constantly see how much I can still learn every day. Sometimes I go back to a simple thing like farfalle, but every time I make them they come out a little different even if you have done this for your entire life, and that's why simple things become magic.
