Aprons will be provided before the cooking session, ensuring your participation is both enjoyable and comfortable throughout.

Menu

• Dashi: The soup base that is the basis of Japanese cuisine. It adds a deep umami and flavor to the dish, enhancing and harmonizing the overall taste. We will show you how to make the dashi right in front of you, and you will be able to taste the freshly made dashi.
• Miso Ramen: Rich miso-based soup with chewy noodles. Toppings include boiled eggs, vegetables, and roasted pork.
• Gyoza: Juicy gyoza with handmade filling wrapped in a thin skin. The crispy exterior goes perfectly with the dumplings.
• Matcha and Japanese sweets set:  A traditional Japanese tea ceremony in which carefully brewed strong matcha is accompanied by Japanese sweets. Japanese sweets are beautiful, reflect seasonal ingredients and culture, and go perfectly with matcha.

Schedule

Morning Session:

• 10:50 AM - If you would like a pick-up service, we will meet you at Zoshigaya Station. Zoshigaya Station is on the Fukutoshin Line and is just a 2-minute walk from the classroom. It is also a 15-20-minute walk from the larger Ikebukuro Station.
• 11:00 AM - The instructor will introduce himself and explain today's lesson. The instructor is a former Japanese chef. After introducing himself, he will explain today's practical lesson and show you the recipe.
• 11:15 - Learn and sample the basics of Japanese dashi stock, the soup stock used in ramen. Experience the rich aroma and deep flavor of freshly made dashi stock.
• 11:20 AM - Make and cook the fillings for gyoza. Learn how to make gyoza, including how to wrap them in dough and unique ways to cook them.  
• 11:50 AM - Make your own ramen with our secret miso sauce. Mix dashi stock and our secret miso sauce to make ramen soup. Boil the noodles in a special strainer, and finally arrange them nicely to finish. 12:20 PM - Taste the ramen and gyoza you made!
• 12:45 PM- Enjoy making your own matcha! It's not often that you get the chance to make matcha yourself. Enjoy the rich aroma and flavor of matcha, which pairs perfectly with seasonal Japanese sweets. Enjoy a wonderful time relaxing both body and mind.
• 1:00 PM - End of lesson

Afternoon Session

• 2:50 PM - If you would like a transfer service, we will meet you at Zoshigaya Station. Zoshigaya Station is on the Fukutoshin Line and is just a 3-minute walk from the classroom. It is also a 15-20-minute walk from the larger Ikebukuro Station.
• 3:00 PM - Your instructor will introduce himself and explain today's lesson. Your instructor is a former Japanese chef. After introducing himself, he will explain today's practical lesson and show you the recipe. 3:15 PM - Learn and sample the basics of Japanese dashi, the stock used in ramen soup. Experience the rich aroma and deep flavor of freshly made dashi.
• 3:20 PM - Prepare and cook the gyoza fillings. Learn how to make gyoza, including how to wrap them in dough and unique cooking methods.
• 3:50 PM - Make your own ramen with the secret miso sauce. Mix the dashi stock and the secret miso sauce to make the ramen soup. Boil the noodles in a special strainer, and finally decorate them to finish.
• 4:20 PM - Taste the ramen and gyoza you made yourself!
• 4:45 PM - Enjoy making your own matcha! It's not often that you get to experience making matcha. Enjoy the rich aroma and flavor of matcha and pair it with seasonal Japanese sweets. Enjoy a wonderful time relaxing your body and mind.
