Cocoa has been a symbol of wealth, spirituality, and cultural identity in Oaxaca since pre-Hispanic times. In this immersive class, you’ll experience the ancient art of transforming raw cacao beans into chocolate using time-honored methods passed down through generations.

Guided by Chef Oscar Carrizosa, you'll learn how to roast cacao beans to bring out their deep, complex flavors and grind them by hand using a traditional metate, just as it’s been done for centuries. You’ll explore the rich interplay of chocolate with other native ingredients to elevate its natural essence.

Together, you’ll prepare hot chocolate with water, honoring the ancient Zapotec way, as well as create Oaxacan chocolate ice cream and a simple, flavorful mole, all centered around this sacred ingredient.

Each bite and sip offers a journey into the heart of Oaxaca, where chocolate is more than food—it's a bridge to history, tradition, and the soul of its people.
