In this cooking class, you'll prepare traditional local dishes such as Hoba Sushi and Hoba Miso, make clear soup from scratch using dashi, and enjoy a table-style tea ceremony while seated comfortably in chairs. This experience offers a deep connection to the unique culture of the Hida region.
Hoba Sushi is a traditional dish once eaten as a portable meal by farmers and mountain workers. It features vinegared rice topped with ingredients and wrapped in fragrant magnolia leaves called “hoba.” If hoba leaves are not available, substitute leaves will be used. Hoba Miso, grilled on the leaf, originated from using magnolia leaves as natural plates. The savory aroma and sweetness of the miso, combined with the rich fat of Hida beef, create an unforgettable flavor.
You'll also make Hida Beef Nigiri by shaping the vinegared rice yourself and lightly searing the beef with a burner to bring out its deep umami. Hida beef is a renowned local brand known for its fine marbling, tender texture, and rich taste.
After cooking, relax and enjoy a casual table-style tea ceremony that reflects the spirit of Japanese hospitality — perfect even for beginners. The experience is suitable for both lunch and dinner, and it’s family-friendly, making it ideal for guests with small children.
