Corn, or maize, has been the most important ingredient of the Mexican food since ancient times, but it is nothing without a little secret process you will learn with Chef Dussan: a pre-hispanic method for cooking the corn. Out of this cooked corn comes the masa, which is transformed into tortillas and many other presentations. The simplest way to enjoy a good tortilla is with a taco. Of course, tacos would not be complete without a very good salsa, so you will be learning how to prepare a perfect salsa in a “molcajete”, the volcanic rock mortar & pestle present in Mexico since thousands of years ago.
At the ending of the workshop, Chef Dussan will be sharing Mexican cuisine tales while you enjoy eating your creations.
