Cook a Typical Roman Easter Brunch (One Day Special)

Easter means sacrifice (lamb) and rebirth (egg) and these 2 symbols appear on the table decorations and on the food shapes. So sugar lambs and chocolate eggs are the most common gifts to give the children. 

In Italy Easter is celebrated along 2 days (on Sunday and on Monday) in different ways:

• a big brunch for the Easter day
• the classic outdoor picnic on Monday (Little Easter)

So this class is aimed to cook a part of the food we'll eat on the Easter brunch since I will offer even something more that's typical and that's not possible to cook last minute.

I'm a sommelier so with joy I'll pair every course to a different wine.

At the end of brunch, I will serve my homemade Limoncello, a digestive (we'll need).

I have 3 cats in my flat, so pay attention in case you are allergic!

Menu

We'll cook the following dishes from scratch:

Starter:

• Torta Pasqualina (puff pastry, ricotta, spinaches, eggs)

First course:

• Spring Lasagna ( lasagna sheets, peas, asparagus, bacon, besciamel, parmigiano)

Main course:

• Oven cooked lamb with potatoes

Side:

• Roman style artichokes (prepared with garlic, parsley)

Other typical Easter food will be served including:

Starters:

• Corallina salame
• Boiled eggs
• Pizza di Pasqua (pie with raisin, candied fruits, cinnamon, anis)

Dessert:

• Chocolate eggs
• Pastiera Napoletana (tart with ricotta, cooked wheat, candied orange zests)

Programme

• 10:00 am: Start the Cooking class at Magic Francesca's Place
• 1:00 pm: End of the Class and Enjoy the big Easter Brunch together
