The class took place in the sun dappled canal-side garden of the family compound and began with an icy cold drink. Next came a tour of the herb garden during which we were able to see, touch and taste the herbs and spices we were to use in cooking that day while our truly charming instructor provided a wealth of information about the various uses of the herbs and spices. Then came the cooking demonstration during which Tam was backed up by a team of her cousins, who made everything run seamlessly while Tam shared tips, techniques and even alternatives for ingredients that might not be available in different climates. Following the demonstration came the hands on portion of the class, where we were supported by the cousins while Tam monitored our progress. Finally, we moved on to the best part - eating the truly delicious meal we had just cooked. We came away with recipes for everything we had cooked, some small sense of how many Thais used to live in family compounds, a newfound knowledge of many Thai ingredients and techniques and a further appreciation for the warmth and hospitality of the Thai people. We could not recommend this class more highly.
