What an experience with Trichada !
I have had the opportunity to have a private class (usually class do note xceed 4 people) and to choose 5 different dishes, even some that were not in Trichada's menu such as Khao Soi, and to learn all about the ingredients behind the recipes at the food market.
Trichada is a wonderful teacher and you do not only learn with her about Thai food, but also about Thai culture...
Her comprehensive class is based on the art of balancing the four S (Salt, sweet, spicy and sour) and the traditional tricks to cook Thai food, notably the secrets of all-natural food dyes.
I am looking forward to coming back to Chiang Mai to spend another half day in her peaceful home and learn about new recipes and secrets of Thai food !
