These Mexican cooking classes offer an insider’s look at the local Benito Juarez Market in Puerto Escondido, Oaxaca. We start the day at a local comedor  (Mexican diner) for Oaxacan breakfast and freshly squeezed juice. In the market, we experience the sights, sounds, and smells while exploring and shopping for local ingredients. We check out the unique chiles native to Oaxaca. Learn how to buy, prepare and utilize them. After we tour the market we head into the kitchen to prepare a sumptuous multiple course lunch in the Mexican cooking class.

Plus ice cold Mexican beers and a rare mezcal from Sola de Vega.

Menu

We don't have a set menu. The menu is dependent on what's freshest in the local market and the seasons.

We usually prepare two salsas, ceviche, guacamole, a few of the possibilities for the main course are; mole amarillo, mole verde, chiles rellenos or home-style carnitas. In addition to veggies, rice, beans, fresh fruits, cheese, agua fresca and dessert.

Plus ice cold agua fresca, Mexican beers and a rare tobala mezcal from Sola de Vega.

Schedule

• 8:00 am: We meet in the market then have breakfast.
• 9:00 am: Local market tour and shopping for the class.
• 11:00 am: We head into the kitchen to start cooking.
• 3:00 pm: We usually eat between 2-4 pm the traditional time for the big meal of the day.
• 4:00 pm: End of the meal and class.
