It's a short walk through the beautiful historic center to Federico's apartment which is in the heart of Trastevere (one of the oldest parts of Rome). It is here that you begin to become a ''Chef in a Day'' and the cooking adventure starts! You will be taught from scratch how to make 3 different fresh pastas from 2 different doughs (a long pasta, a stuffed pasta and a short pasta), prepare a traditional second course of meat or fish with vegetables, and a delicious dessert.The lesson is ''hands-on'' and will take approximately 5 hrs. All the recipes will be explained in detail, and many tricks and tips will be given during the class. Chef Federico does not only teach recipes, he explains the ''why'' and ''how'' of the methods taught.

One of the most amazing experiences we had in Italy. We started off by meeting at the local market where the chef bough all fresh ingredients (fresh fruit at the food market, fresh meat at butcher shop, fresh fish at the fish shop and cheese shop). We found this part so cool and educational. We went to the chef's cook studio were we learned how to cook home made sauce, 3 types of home made pasta and a fish and meat dish. The whole experiences was fun and educational. One of the BEST part about the class was the chef and his assistant had so much passion to teach us and were funny. I can keep writing about my experiences but at the end of the day book this class, you won't be disappointed at all. Thank you Chef, we had an amazing time with you.
Chef Alessandri conducted an awesome, hands-on cooking class. Taking a cooking class in Italy is one of the few things on my “bucket list” and this exceeded all expectations! Chef taught us how to make a variety of pastas, sauces, a dessert, first course, and the science behind what he did and why. He was so generous with his knowledge of technique, balancing flavors, and presentation. He even taught us how to make our spices with home grown ingredients. If I ever get another chance to take one of his classes, I will do it without hesitation! Grazie, Chef!!
Chef Federico Alessandri is super skilled, patient, talented and positive person. I had a great time with him and his assistant. We went to market to buy the ingredients, we cooked 3 different pastas, artichoke and fish. All was so delicious with a beautiful presentation. I’ve learned a lot and can’t wait to start cooking! When I first registered for the class, I was afraid it was going to be about eating and drinking instead of learning about Italian cooking. I was glad to find out that the instructor, Federico Alessandri, is a talented chef who also knows how to teach the methods you would not find in a cook book. We learned 3 sauces, 3 pastas, an antipasti, a meat and vegetable dish, a lot about temperature and reduction, garlic, enzymes, cheeses, marinades...and the list goes on. Federico is dynamic, intellectual, and humorous, instructor who takes time for questions and discussion. From the moment we started at the Campo de' Fiori market, he kept us all captivated and he held our full attention until the last course was perfected and served at the end of the day!
My daughter is a culinary student in the States, and when we decided to take a trip to Rome, we had to get her a real Italian cooking class. Chef Alessandri far exceeded our expectations. He was educational, funny, entertaining and extremely knowledgeable. My daughter left the private lesson more excited about cooking than ever before. He helped her understand what it meant to cook a meal, the details he went into were fantastic and the food was out of this world.
