Class take place in one of San Miguel's most hallowed spaces still run by original family, not open to the public, in the heart of town. We harvest from an organic graden on the grounds and work hands-on to make a grand Mexican meal, tasting along the way in a beautiful kitchen. We enjoy a cheese tasting, explore fresh & dried chiles, try typical herbs from the garden and then we prepare a few dishes with a Mexican corn delicacy (huitlacoche, when available), a 'guiso' with local vegetables and a Chicken tinga o mole. We will work with fresh masa to make tortillas. During the class, we'll enjoy Margaritas prepared with fresh fruit. Class is great fun, hands-on and tasty, so come hungry and prepared to sit down to a grand feast at the end. Includes digital recipes.
