What to Expect

Our open classes are designed to immerse you in the vibrant flavors and rich culinary traditions of Oaxaca and Mexico. Using fresh, traditional ingredients, you will learn to prepare authentic and inspired recipes that showcase the region’s unique gastronomy. Each class lasts approximately 4 to 5 hours, but it is the culmination of many hours of careful preparation to ensure an engaging and seamless experience.

Whether you are a beginner or an experienced cook, our hands-on classes are tailored for all skill levels, allowing you to actively participate in every step of the cooking process. Under expert guidance, you will gain valuable techniques, insights into ingredient selection, and a deeper understanding of the cultural significance behind each dish.

More than just a cooking class, this is an opportunity to connect with Oaxacan traditions, meet fellow food enthusiasts, and leave with the confidence to recreate these flavors at home.

Menu

The menu changes for each class but will typically include:

• One of the local moles
• A side dish
• An appetizer (sometimes a salsa)
• Tortillas or Bollios depending on main course
• An Agua Fresca (fresh sweetened fruit flavored water)
• A dessert

Note:

• We will do our best to accommodate dietary restrictions, but not at the expense of the authenticity of the dish.

Schedule

• 9:45 am: Arrive at the cooking school.
• !0:00 am: Introductions and brief overview of the days events.
• 10:15: Walk to the local market for a short tour led by a native and one who has been instructing classes for close to 25 years, and preparing/cooking since a child. Nora is also a federal guide so your tour will not only be on the freshness of the peppers used in the class but their history as well.
• 11:15: Return to the cooking school.
• 11:30: Begin the hands-on cooking class.
• 2:00 pm: Seated to enjoy the culinary delights you’ve prepared gathered at a formal table.
• 3:00 pm: End of the experience.
