Discover the joy of Japanese home cooking with Grandma in Nagoya as you learn to prepare Ichiju-Sansai, a traditional Japanese meal consisting of one soup and three side dishes.

During this hands-on class, you'll make authentic dashi from kombu and bonito flakes—the essential foundation of Japanese cuisine—and use it to create comforting home-style dishes that have been enjoyed by my family for generations.

Nagoya is renowned for its rich fermentation culture, and you'll explore the unique flavors of local miso, koji, and soy sauce through a guided tasting, gaining a deeper appreciation for these essential Japanese seasonings.

After enjoying the meal you've prepared, you'll complete your cultural experience by whisking your own bowl of matcha and pairing it with seasonal Japanese sweets (wagashi).

• Grilled Chicken Marinated in Red Miso
• Grilled Salmon with Salted Rice Malt (Shio Koji)

• Vegetables and Tofu Soup with Soy Sauce
• Japanese Rolled Omelet (Tamagoyaki)
• Spinach Salad with Sesame Dressing
• Hand-Shaped Rice Balls (Onigiri)

Included Experience

• Learn to prepare a basic Japanese dashi stock
• Traditional Matcha Tea Experience

Note:

• All guests in the same booking will prepare the same main dish. If no preference is provided, Grilled Chicken Marinated in Red Miso will be served.
• If you have any food allergies or ingredients you would like to avoid, please let us know in advance when making your reservation.

Schedule

• 10:30 AM – Meet the group outside Exit 7 of Sakurayama Station (Nagoya Subway).
• 10:35 AM – Welcome and introduction while enjoying a cup of Japanese green tea.
• 10:45 AM – Begin the hands-on cooking class by preparing dashi, the essential Japanese soup stock, followed by the rest of the traditional Ichiju-Sansai meal.
• 12:15 PM – Enjoy the homemade meal you have prepared together.
• 12:45 PM – Experience a Ryurei-style Matcha Tea Ceremony and learn the basics of preparing and serving matcha.
• 1:30 PM – End of the experience.
