He's worked as a tour guide, travel agent, and manager for leading companies, and built a reputation for leading standout gastronomic tours that go beyond the usual sightseeing. Today, as the founder of Apullay Tours, Jimmy leads a small, passionate team of local chefs and guides dedicated to creating authentic, close-up experiences of Peru — the kind that connect travelers with real people, real kitchens, and real traditions. While Jimmy personally hosts many experiences, you may also be welcomed by one of his trusted chefs or guides, all trained to share that same warmth and hands-on approach that makes every Apullay experience feel personal.

Fantastic Pisco Tasting & Cocktail Experience

We did the pisco tasting, and it was great. It all started with a proper lesson on history of pisco and how it came to be. We learned about the types of grapes and types of pisco. We tasted 4 different piscos and with the fifth we made cocktails. All paired nicely with typical Peruvian desserts. I can only recommend the experience!
