Fry up some special Okinawan-style pilaf called jushi and simmered pork ribs called rafute.

Then make an Okinawan soup called yushidofu and try a form of tofu before it has been pressed into the iconic block shape. A real Okinawan meal wouldn’t be complete without the famous Goya Champuru. Use local bittermelon and vegetables to complete the dish then enjoy your meal while hearing more about the unique history all around you.
