Then, head into the kitchen and get hands-on as you prepare an authentic family-style menu from scratch.

Learn the secrets behind El Quichón, an ancestral recado made with charred ingredients and traditional cooking methods, and prepare the historic Sopa de Soldadito. You’ll also discover how to make Ticucos on the traditional comal and practice hand-patting your own tortillas before cooking them over the fire.

Hello! I’m Claudia, a local chef passionate about ancestral cuisine. I come from Alotenango, a beautiful town nestled among volcanoes. My love for cooking began when I was seven, watching my grandmother’s patience as she cooked over a wood fire. Today, I keep her legacy alive at Utum by sharing the culinary secrets passed down through four generations of women in my family. We will cook using traditional tools, such as a volcanic grinding stone and a clay *comal* (griddle). My driving force is to pass this living culture on to my daughter and to share the richness of Maya Kaqchikel identity with the world.

“Soldadito” Soup – A historic soup made with fresh garden herbs and a distinctive touch of bitter orange.
El Quichón – An ancestral Guatemalan recado prepared with charred ingredients, ground on volcanic stone, and slow-cooked in clay pots over a wood fire.
Eggs on Comal Tortillas – Traditional oil-free eggs served with handmade tortillas cooked directly on the comal.
Ticucos – Handmade tortillas filled with concentrated black bean paste and toasted on the comal.
Mystical Dessert – Local sweet potato slow-cooked in the glowing embers of a traditional wood-burning hearth.
