Fresh handmade pasta is my favorite way to express this passion—from orecchiette and cavatelli to maccheroni al ferretto, tortellini, ravioli, trofie, and fettuccine. Kneading, shaping, and cooking pasta is, for me, a ritual that brings the past and present together. My goal is to share and preserve my family’s authentic culinary traditions while embracing sustainability and thoughtful innovation, always maintaining a strong connection to my roots.
