Located in the center of Vietnam, Hue was the capital city of Vietnam for approximately 150 years during feudal time. The royal lifestyle and customs have had a significant impact on the characteristics of Hue’s people as well as Hue’s cuisine. There are two forms of Hue cuisine: Hue traditional cuisine and Hue royal cuisine. But in general, both have similarities because the royal chefs also came from the folk.
