We will prepare and serve 100% farm menus following indications of the Agrichef Claudia Russo, and also discovering the specialties of the territory in the street market of the nearby Cortona and Tuoro sul Trasimeno.
I could write three pages about our positive experience today but I’ll respect your time and simply say that it’s a must stop in your Tuscany/Cortona trip. Claudia, our host, kindly shared her experience and insights to prepare a entire meal. We were fortunate enough to share time w/her husband, her very attentive staff and her world experienced father (a famed Italian chef and cookbook author). Be sure to take the time for a tour of the farm that support the company’s use of pork, milk, wine olive oil. It dates back to the 16th century.
I just brought several groups to the Good Ciao Cooking School over the past 2 months. Everyone loves the courses because we learn so many interesting things. We taste olive oil, sample the homemade wine, visit the pigs and see the process of proscuitto and pasta, and other delectable things, while learning a bit about the history of the Etruscans, and Cortona. Transport yourself to a comfort level while in Italy and really feel like a local at this cooking class in the country just a few miles from the lovely town of Cortona.
Claudia guided us with great skills and sweetness through the creation of homemade Tuscan pasta, porkloin with a wonderful cream sauce and the most delicious Tiramisu. We can highly recommend this cooking class.
