• Seared Hida Beef Sushi (You do the searing!) — Master the art of sushi-making! After shaping the rice by hand, you'll use a professional-grade torch to carefully sear premium Hida beef. Watch the marbling melt before your eyes and savor the rich, fragrant aroma of seared wagyu.
• Hida Beef Hoba Miso Steak — Juicy Hida beef and seasonal vegetables are placed on a large hoba leaf (magnolia leaf) and cooked over a Hida konro (traditional clay stove). This dish is served with a special miso blend that you prepare yourself. The sizzling miso and the rustic, earthy scent of the hoba leaf create a truly sensory feast.
• Ultimate Umami Rice — A must for food lovers: savor the rich, concentrated umami of Hida beef miso spooned over fluffy steamed rice. This is authentic local flavor at its finest, letting you enjoy every last bit of that deep, savory goodness.
• Traditional Hoba Sushi — Learn the art of wrapping seasoned rice and colorful fillings in natural leaves. This traditional "portable meal" was once beloved by local farmers and mountain workers for its practicality and beauty. (Note: Fresh magnolia leaves are used in summer; premium seasonal leaves are used during other times of the year.)
• Authentic Fruit Daifuku with Perilla Paste (Soft Mochi Sweets) — Using soft, pillowy mochi and sweet red bean paste, create your very own seasonal fruit daifuku. Experience the soothing, rhythmic process of grinding roasted egoma (wild perilla seeds) into a rich, fragrant paste. Wrapping fresh fruit in mochi is just as fun as eating it!
