We were hesitant at first. Go all the way to Rome to take a cooking class? But our evening with the chef and staff and another family (there were eight of us all together) could not have been more enjoyable. We all pitched in to prepare two kinds of hand-made pasta (cavatelli and fettuccini), tomato sauce, caramelized cherry tomatoes, stuffed and fried zucchini blossoms, fried sage, Roman-style artichokes (carciofi), and tira misu, while drinking copious amounts of Prosecco and red wine. By the end of the evening we were like one big happy Italian family.They were all so gracious and entertaining. The food was the best we’ve had in Rome so far, and we learned lots of simple cooking tips that we will definitely be using at home. Truly a great experience!
