Risotto, together with pasta, is undoubtedly one of the cornerstones of Italian cuisine. In particular, it's the most famous dish of Lombard and Milanese cuisine. It may seem simple to make, but understanding the perfect technique can make you an expert in creating "risotto all'onda", or wave risotto. For the Italians, this in the perfect risotto; it's creamy, falls off the spoon, and not too sticky.
In this cooking class, you'll not only be learning how to make 3 kinds of authentic risotto's, but you'll also learn the story behind the dish! The chef will teach you how to recognize the different varieties of rice and how they can be used for each variation in risotto and other dishes. When the foundation of that knowledge has been laid, it's time for the preparation of the risotto; roasting, cooking, and "mantacatura", the essential technique to getting the "wave risotto".
Everyone will play an active part in both the preparation of the 3 dishes, as well as the enjoyment of the creations in the end. And of course, no great dish goes without the company of a good (Italian) wine!
In the end, you'll go home with a full stomach, glowing heart, and knowledgable mind!
