Notre journée a été une expérience inoubliable ! José, notre professeur, nous a offert un moment unique, à un rythme parfait, et plein de saveurs, dans le cadre magnifique d'une ferme urbaine. Nous avons préparé des tortillas maison, garnies de cactus, de champignons et de fromage. Au menu : soupe de légumes, poulet au mole d'amandes, porc à l'adobo et un dessert à la banane plantain étonnamment délicieux. De l'accueil chaleureux à la visite du marché, jusqu'au repas final, cette journée restera gravée dans nos mémoires. Mezcal, bière, eau et jus de fruits étaient à disposition. À faire absolument !

After traveling to a lot of countries, I decided to go back to Oaxaca, go deeper into my heritage, and cook proper ancient Oaxaca cuisine, like my grandmother's cooking. In 2016, I also decided to travel all around Oaxaca state to learn more and go back to my roots to recover the Oaxaca ancient cuisine like generations ago.
I created a concept called "eating like in the village". The idea was to teach about and serve food cooked in the old-fashioned way in wooden fire stoves. In 2017, I decided to create “ The Real Oaxaca Cooking Experience”. The main idea is to show you a complete 100% hands-on workshop about the magic and flavors of Oaxaca cuisine on our small farm.
