The course will introduce you to seafood and fish cooking: the Mediterranean sea finfish, mollusks and clams.
Which fish for any dish? What does fresh fish mean? How to understand if a fish is fresh or stale? Fresh and frozen?
Mollusks: Octopuses, squid, cuttlefish… and relatives… fresh or frozen? Clams, shrimps crabs: cooked or not ?.... wonderful ways to cook clams… wonderful ways to prepare pasta with clams…
We will teach you the way we do it so you can cooking delicious Mediterranean cuisine on your own!
There is not a fixed menu, as Riccardo will define the day menu on the basis of the fresh ingredients of the season, chosen at the fresh food stall street market, and after a brief visit to it with you about your expectations.
Anyway we always will have a jummy appetizer, at least one pasta dish and some "special effect" from the seafruit market, and you will learn how to make it handmade with some traditional dressing, and a special Italian dessert.
