I will welcome you into my professional kitchen, located inside a historic home in Palermo’s old town. Over coffee, we’ll get to know each other and begin by exploring the ingredients and their deep connection to the land. Then we’ll move into the heart of the experience: a hands-on session where we cook side by side — kneading dough and rolling sheets — with care, sensitivity, and intention. I will guide you through the recipes, balancing tradition with contemporary techniques.

This will be a living workshop, shaped by hands, intuition, and glasses of wine. Finally, we’ll relax and savor the fruits of our work, immersing ourselves in the pleasure of flavors and textures. Through aromas and tastes, we’ll discover how a dish can carry the memory of encounters between peoples and lands — a reminder that tradition is not a still photograph, but the frame of a film that keeps moving.

• Shapes (2–3, depending on the group): Tagliatelle, Busiate, Tortelli
• Typical sauces (2): Light Norma, Trapanese pesto

• The menu will follow the seasons: we will prepare fresh pasta with 2–3 classic Sicilian sauces or personal interpretations, always rooted in local tradition.
• This is not just about replicating recipes — we will focus on building sensitivity and skills: learning to choose, taste, adjust, and plate.

• 10:00 AM – Welcome & coffee: Greeting, story of the place, and introduction to the ingredients
• 10:20 AM – Egg pasta and water & semolina pasta: hydration, texture, resting
• 11:00 AM – Shaping 2–3 types of pasta (tagliatelle, busiate, tortelli)
• 12:45 PM – Preparing two typical condiments with seasonal ingredients
• 1:15 PM – Tasting, sharing, and final reflections
• 2:00 PM – End of the experience
