In this cooking class, we will make miso ramen noodles from scratch.

Nagoya is famous for its fermented foods, and miso is one of the most cherished among them.

The city also has deep historical roots—it was home to many warriors during the Warring States period and is known for historic landmarks like Nagoya Castle. This rich history and culture have shaped Nagoya’s unique culinary identity, often referred to as “Nagoya-meshi” (Nagoya cuisine), which continues to attract both Japanese and international visitors eager to explore its flavors.

• Miso Ramen

You will make miso ramen using miso, a traditional Japanese seasoning. Nagoya is very famous for miso. This time, you will make ramen using Nagoya's miso with plenty of vegetables.

In this hands-on lesson, you'll learn how to make a rich and flavorful miso ramen soup using a recommended recipe. This experience goes beyond simply watching a demonstration—it's all about getting involved and cooking together.

Ramen is one of the most popular Japanese dishes today. In this class, you'll prepare miso ramen loaded with fresh vegetables. Miso, a traditional Japanese seasoning, comes in many varieties. Nagoya, known for its thriving fermentation culture, is home to many historic producers of miso, soy sauce, and mirin.

Nagoya’s signature miso, known as aka-miso (red miso), has a deeper color and a saltier taste compared to Kyoto’s white miso. However, when used in ramen, it becomes surprisingly mild and pairs perfectly with noodles and vegetables.

Morning Session

• 9:30 AM: Meet at the kitchen studio.
• 9:40 AM: Start the cooking session with the instructor.
• 10:50 AM: Enjoy the dishes you created.
• 11:30 AM: End of experience.

Afternoon Session

• 5:30 PM: Meet at the kitchen studio.
• 5:40 PM: Start  the cooking session with the instructor.
• 6:50 PM: Enjoy the dishes you created.
• 7:30 PM: End of experience.
