Lise was great. Very informative and pleasant. Her gentle coaching made the afternoon/evening class enjoyable and resulted in a delicious meal that we shared with new friends.
This was one of the activities I was most looking forward in Oaxaca and it did not disappoint. The shopping at the market was a great way to start the workshop and I was introduced to a few new ingredients. It was so fun to be a part of of the group cooking and we made an incredible meal. A few things to note, it is a relaxed environment so everyone gets random tasks to help prepare the meal and you get to rotate to different stations in the kitchen. Also the people in my group were from a variety of sources and some signed up for a vegetarian cooking class, no worries they can make everything vegan!
My partner and I took the class and loved it. We really enjoyed getting to explore the market to buy food before starting cooking, and that everyone’s preferences and restrictions were taken into consideration for the class. Chef Martin was a great instructor, and super knowledgeable about the history of agriculture in Oaxaca and Mexico.
We enjoyed our class with Chef Martin immensely. He is knowledgeable, engaging, and friendly. Most impressively, he managed about 8 of us in the kitchen with ease - we were all given tasks and enough instruction and guidance to do them successfully. All of the food was fresh, flavorful, and delicious - can't recommend this class highly enough!
Chef Cesar was creative, knowledgable, and kind. We started with the market tour and shopping which was fascinating. With a lot of patience, Cesar explained the origin of ingredients and their usage in Mexican cuisine. After cooking all the delicious Oaxacan dishes, we got to eat our creations. Can't wait to try the recipes at home. Thanks, Cesar!
My favorite experience and meal in Oaxaca. I am a home vegan chef and I was surprised by this fun hands on experience. I learned new Oaxaca flavors and spices. My spouse was equally entertained. The meal we prepared was complex and delicious. Chef Martin was terrific.
My daughters and I booked this for our first day in Oaxaca. It was a perfect way to start our trip. We have a kitchen in our Airbnb and my daughters felt comfortable shopping in the markets for fresh produce to cook in the kitchen after this class! We’ve been cooking amazing Vegan Mexican meals thanks to Martin!! He gave us a history lesson on the culture of Mexico too. Did you know originally Mexican people were vegan/vegetarians? Muchas gracias mi hermano!
A friend (who is not a vegan) and I signed up for this cooking class for our first full day in Oaxaca as a means of exploring the possibilities of a vegan cuisine in this town. And it turned out to be the perfect way to kick off our trip. Our chef/instructor (Martin) was not only a talented and knowledgeable cook but a joyful and skillful organizer who led all six students through the market, answering our barrage of questions and then guiding us back to the Etnofood Kitchen to whip up a several-course meal and mezcal finale that left everyone smiling and applauding.
Martin was our guide and head chef: relaxed, funny, and knowledgable. He helped create a friendly environment for all of us in the group (about 10 people) as he taught us about local ingredients while leading us around Mercado Merced, and then he expertly guided us in preparing a delicious vegan/vegetarian meal. Highly recommend!

Renato had a lot of interesting facts to share about the city and people who live there. Also his English was very good! It was a lot of fun to cook the traditional oaxacan mole and also very delicious!!! The group was amazing and the mezcal very tasty! :)
This class was great and was a highlight of our time in Oaxaca City. Juan Carlos and his team were so much fun and the entire experience was an education that went beyond food and did a deep dive into the culture and history of the entire Oaxaca region. 10/10 would absolutely do again!
We had an absolutely brilliant time in our cooking class. Renato was very knowledgeable and helpful, and all the staff were relaxed and fun. We learned loads about Oaxacan food and culture, and made some delicious food in a comfortable setting. Couldn't recommend it more!
I’m so glad I was able to attend this cooking class after having signed up the night before. Renato was the tour guide of dreams— super patient with all my questions, super knowledgeable about the area and the culture (especially enjoyed his interest in etymology) and super buena onda. His relationship with the vendors at the market impressed me, and his explanations of the process of cooking—and then the end result—were fantastic. I also had the chance to meet the rest of the staff/cooking team who were also very sweet! Two other things— I’m not actually vegan, but I appreciated the opportunity to cook with the bounty of vegetables Oaxaca has, and the end product was totally delicious. Also, I originally wanted to take a class with an elder, but it was really special working with this young group— they were selected by a national program to develop their entrepreneurial ideas, and it shows in their investment in and excitement about this project. Highly highly recommend
