This class invites you to learn from Suiren’s head chef, a master who represented Japan on the world stage such as Japan Pavilion at the 2016 Rio de Janeiro Olympics, and for dignitaries at the World Economic Forum in Davos. He has also appeared on TV before.
In this class, you’ll start from the foundation of washoku: the art of making dashi, the essence of umami. From there, you’ll craft handmade udon or soba, and beautifully prepared sushi, guided personally by the chef.
Though trained in the precision of Kyoto’s culinary tradition, he is also celebrated for his creativity—offering dishes that blend artistry and freedom.
