Get hands-on experience preparing some of Peru’s most iconic dishes and shopping at a local market during this 4-hour Lima cooking class. First stop by the market to pick out fresh meat and produce, discovering the incredible diversity of ingredients in Peruvian cuisine. Then head to the kitchen choosing to prepare a choice of fish, chicken, beef or vegetarian dish like ‘Ceviche’ or ‘Lomo Saltado,’ learning the necessary steps in fun, relaxed atmosphere. Your cooking excursion also includes round-trip hotel transport (for most areas of Lima), professional chef instructor, snacks and either lunch or dinner.

After hotel pickup, you will enjoy a visit to a market and a cooking class perfect to introduce you to the best dishes in Peruvian cuisine. You will be in a relaxed atmosphere with no dull demos and a great hands-on approach. You will first head to the local market to experience the authentic atmosphere where the main ingredients for the food you'll cook are sold. As a starter, you will cook our Peruvian National dish called "Ceviche" the most popular dish among Peruvians. It is made of small size pieces of fish marinated raw in fresh aromatic lime juice tender onions, boiled sweet potatoes mixed with or without Andean hot chilis. Then, the main dish is "Sudado de Pescado" which is steamed Fish with red onions and fresh herbs; cooked with yellow half spicy sauce.
As starter, you will learn to prepare the two most Typical Peruvian sauces: Papas a la Huancaina (Huancayo-style potatoes) which comes from the middle of the Andes of Peru and Ocopa sauce which is from the south of the Andes near Cusco. Both starters consist of a creamy slightly spicy sauce made with the freshest aromatic herbs from the mountains and other fresh local chili with cheese sauceboth served with native organic sliced boiled potatoes. The main course is "Aji de Pollo" which in English means chili chicken and consists of thin strips of chicken served with a creamy yellow and spicy sauce, made with ají amarillo (yellow chilis), cheese, milk, cronchi bread.
For starter you will make the delicious "Causa Limeña" Mashed organic yellow potatoes seasoned with lime and aji (hot pepper), and filled with fresh seasonal local veggies (it is less than half spicy). "Lomo saltado" which is beef tenderloin slices, sauteed with onions, tomatoes, aji (hot peppers), and more spices. It is served with French fries and rice.
For starter, you will also make "Solterito” which in English means “Single men” and it has green peas, faba beans, cuinua! and olive oil. The main course is “Pimento Relleno” which is a stuffed capsicum, filled up with fresh vegetables and organic herbs from the north of the country.

Starters:
Ceviche: Prepared with fresh fish marinated with "Leche de tigre", a mixture of fish juice, lemon, chili, onion, cilantro, garlic, and spices, which gives it a unique intensity of flavor. "Leche de tigre" not only enhances the flavor of the fish but also creates a perfect marinade that brings out the spiciness and acidity. It is accompanied by onions, sweet potato, and corn, generating an explosion of freshness and textures in every bite.
Causa: Delicately prepared layers of mashed potatoes, seasoned with lemon, yellow chili, salt, and oil. And accompanied by a select mix of vegetables and quinoa. Its colorful presentation and combination of flavors make it a popular starter in Peruvian cuisine.
Papa Rellena: This dish features mashed potatoes filled with a savory blend of seasoned ground beef, onions, olives, and hard-boiled eggs. The stuffed potatoes are delicately fried until golden brown and crispy, creating a perfect balance between the crunchy exterior and the tender, savory interior. An authentic expression of Peruvian home cooking at its finest.
Main Course:
Lomo Saltado: An emblematic dish that fuses Chinese and Peruvian influences. It consists of pieces of beef sautéed over high heat with onion, tomato, yellow chili pepper, soy sauce, and vinegar, achieving a juicy and intense flavor. It is served with French fries and white rice, combining textures and flavors in a perfect balance.
Ají de Pollo: It is prepared with shredded chicken breast, cooked in a thick sauce made with yellow chili and spices. Its texture is enriched with cheese and nuts, adding depth to the flavor. It is served with white rice, boiled potatoes, hard-boiled egg, and black olives, achieving a delicious and balanced combination that makes it one of the most beloved dishes in Peru.
Pescado a la Chorrillana: Fried fish fillet, covered with an exquisite sauce made from onions, tomatoes, garlic, and chili peppers, which provides an intensity of unique and authentic flavors. This delicious dish is accompanied by soft sweet potatoes and rice, creating a perfect combination of textures and aromas that delight the palate.
