Kiyoto

I’m Kiyoto, the founder of SHIGEN and a restaurant owner in Japan. After spending two years in Australia, I came to appreciate how sharing food can bring people together across cultures. My mother’s experience working in Japanese restaurants is also part of the food knowledge behind SHIGEN. Through dashi, koji, miso, and sake, I want to share the ingredients and stories that shape everyday Japanese cooking. The name SHIGEN comes from “Insui Shigen,” the idea of remembering the source when drinking water. For us, that means appreciating the people, places, and traditions behind what we eat.

11:20 AM - Dashi Demonstration & Tasting
Discover how to make traditional dashi broth using kombu and bonito, followed by a tasting.
11:40 AM - Hands-On Miso-Making Workshop

More Than Just a Cooking Class

A fantastic way to experience Japanese food culture beyond the usual tourist activities. The dashi tasting was a great introduction, and making our own miso was both fun and educational. We then prepared onigiri and sat down together for a wonderful seasonal meal. The sake pairing added another enjoyable element, and being able to take our homemade miso home made the experience feel truly personal and unique.

Hands-On, Delicious & Authentic

I really enjoyed this cooking workshop! Making miso from scratch was something I had never done before, and it was fascinating to learn about soybeans, koji, and the fermentation process. We also made onigiri and enjoyed a delicious seasonal meal with plenty of sake to taste. The atmosphere was relaxed and welcoming, and I left with a much deeper appreciation for Japanese food traditions.

A Wonderful Introduction to Japanese Home Cooking

This was such a memorable experience in Tokyo. We learned how to make dashi, prepared our own miso from soybeans, and shaped onigiri by hand. Everything was explained clearly, and I loved learning the stories behind the ingredients. Sharing a seasonal meal with Japanese sake made the experience even more special. Taking home our freshly made miso was a lovely bonus!
