Pasta Workshop and Farmer's Lunch in a Cave

Myself, wife and daughter had a great class/experience in a nicely restored historic cave dwelling (sasso). We had a fun lesson learning to make strascinati pasta by hand as well as enjoying fresh made panzanella and local wine. Organizer Lorenzo and chef Cosimo were fun, informative and easy to work with. Highly recommended if you have a day or two in Matera and would like to learn about the local cuisine.

Spring brings fresh asparagus and wild garlic, while summer highlights ripe tomatoes, basil, and the iconic panzerotto fritti. Many classes showcase seasonal recipes like ricotta tart with lemon zest or grilled eggplant with olive oil.

Solo participants often find the communal meal at the end of the class—a shared platter of pasta and cured meats—an unexpected social highlight, offering a chance to mingle with locals and fellow food enthusiasts.
