Okinawan Blue-Zone Home Cooking Class

About

Okinawa is one of the world’s ""Blue Zones,"" where people live long lives. Okinawan cuisine features locally grown, nutrient-rich produce.

Your teacher for this Okinawan cooking class will adjust the menu according to seasonal availability and can accommodate dietary restrictions with advance notice. Choose from three menus and please specify your choice iupon booking.

The fee includes the cooking lesson, a bilingual local guide, lunch (after the lesson), and tea or water. Additional fees apply for ingredients, and transportation is excluded.

Menu

Traditional Ryukyu Cuisine

• Minudaru (ミヌダル): Steamed pork loin coated with black sesame paste.
• Gunbo Machi/Gobo Maki (グンボーマチ / ゴボウマキ): Burdock rolled up in thinly sliced pork or kelp.
• Ura Chikichinuku (ウラチキチヌク): Shiitake mushroom stuffed with fish paste.
• Tauchiicho (タウチーチョー): Deep-fried sweets stuffed with sesame seeds & candied citrus paste.

Okinawan Home Cooking

• Tofu/Goya/Somin Champuru (トーフ/ゴーヤ/ソーミン（ソーメン）チャンプルー): Okinawan stir-fry dish with pork and vegetables.
• Jyushii (ジューシー): Rice dish with diced pork, shiitake mushroom, carrots.
• Green Papaya Irichii (アオパパイヤ　イリチー): Shredded papaya with pork braised in soy sauce & dashi.
• Sata Andagi (サーターアンダギー): Okinawan donuts.

Okinawan Noodles (Vegetarian/vegan available)

• Handmade Okinawan noodles topped with braised pork belly or ribs. For vegetarians/vegans, yushi tofu and sides will be prepared.

Schedule

• Arrival at the cooking school.
• Presentation of all ingredients and equipment slated for use.
• Start of the hands-on cooking session.
• Indulge in the culinary delights crafted during the class.
• End of the experience.
