What to Expect

Escape the city for a relaxed morning of fresh pasta, Prosecco, and good company at our countryside villa near Bologna. Every Wednesday and Sunday at 11:00, Bianca welcomes solo travellers, couples, and friends to cook and share the table together.

Using family recipes passed down through generations, you will make tagliatelle alla Bolognese and handmade ravioli from scratch. Bianca will teach you authentic techniques and practical tips you can use at home. We use carefully selected local and seasonal ingredients whenever possible, including organic flour from our local mill.

The hands-on class takes place in our air-conditioned kitchen. Afterwards, sit down with the group and enjoy the generous lunch you have prepared, overlooking the surrounding hills and plains.

Ciao! My name is Bianca, and nothing brings me greater joy than sharing the dishes I hold close to my heart. When my children ventured off to explore the world, I found myself with an empty kitchen and no one to pamper with my cooking. Today, I welcome travellers to Felsina Culinaria for authentic, hands-on Bolognese cooking courses near Bologna, based on family recipes and techniques passed down by my grandmother. Guests may book a private cooking course or join a shared cooking course. Andiamo!

Ricotta Ravioli

Ravioli are large pasta pouches, filled with ricotta cheese. When served with a simple yet exquisite sauce of melted butter and sage leaves, they create a dish that's both delicate and indulgent.

Tagliatelle alla Bolognese

A true Bolognese classic, this dish pairs fresh tagliatelle with a slow-cooked ragù. The broad pasta ribbons hold the rich, savoury sauce beautifully, creating a warm, generous plate that is both comforting and full of depth.

Arrival at Villa degli Olmi – Arrive by car or enjoy complimentary pickup from Castel San Pietro Terme railway station. Private transfers from central Bologna are also available for an additional fee.
Welcome & Menu Introduction – Meet Bianca and discover the menu and traditions behind each dish.
Prepare the Ingredients – Learn the basics of mise en place using carefully selected local ingredients, including organic flour from a nearby mill.
Fresh Pasta Making – Make pasta dough from scratch and learn to shape traditional tagliatelle and ravioli.
Bolognese Cooking Techniques – Discover authentic techniques and practical tips for recreating the dishes at home.
Cook & Dine – Prepare your dishes in the air-conditioned countryside kitchen, then enjoy your homemade Bolognese lunch together with Prosecco.
Departure – Return to the agreed drop-off point. Guests arriving by car can depart directly from the villa.
