  • 2 anchovy filets, chopped
  • 1 clove garlic, minced
  • 2 egg yolks
  • 2 tbsp lemon juice
  • 1/2 cup extra-virgin olive oil
  • 1/4 cup grated Parmesan cheese
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a small bowl, mash together the anchovy filets and minced garlic to make a paste.
  2. Add in the egg yolks and lemon juice and mix until fully combined.
  3. Slowly drizzle in the olive oil, whisking constantly, until the dressing is well-emulsified and thickened.
