Nagoya, known for its thriving fermentation culture, is home to many historic producers of miso, soy sauce, and mirin.

Nagoya’s signature miso, known as aka-miso (red miso), has a deeper color and a saltier taste compared to Kyoto’s white miso. However, when used in ramen, it becomes surprisingly mild and pairs perfectly with noodles and vegetables.

Nagoya is also rich in history—once home to famous warlords during the Sengoku period, with iconic landmarks like Nagoya Castle. Its culinary tradition, known as Nagoya Meshi, reflects this vibrant cultural heritage and attracts food lovers from all over the world.
