In this hands-on class, you’ll learn how to make authentic ramen and gyoza completely from scratch, using only fresh, natural ingredients—no MSG or artificial flavorings.
We’ll begin by preparing the ramen broth. With simple yet flavorful ingredients like chicken, pork, dried bonito (katsuobushi), kelp (kombu), and dried shiitake mushrooms, I’ll guide you in creating a rich, umami-packed soup in a surprisingly short time.
Next, we’ll knead and roll out fresh ramen noodles by hand. The chewy texture of homemade noodles is something you can’t find in store-bought versions!
Then we’ll move on to the toppings: tender homemade chashu (braised pork), soft-boiled eggs, green onions, and nori. You’ll assemble your own custom bowl of ramen, just the way you like it.
For the gyoza, we’ll make the filling with pork, cabbage, garlic, and ginger, then wrap each dumpling by hand. I’ll show you an easy folding technique before we pan-fry them to golden, crispy perfection.

This cooking class is held either in a rental kitchen in central Tokyo or at a private home in Koganei City, a quiet residential neighborhood about 25 minutes by train from Shinjuku. You can choose your preferred location after booking.
